Turkey Chili with Butternut Squash

The Super Bowl is around the corner and while I’m not a football fan I love an excuse to throw a party. One of my favorite one pot winter dishes to make and serve for a group is chili. It’s easy, doesn’t really require a recipe and guests can customize with their own toppings. I’ve been experimenting with using ground turkey meat instead of ground beef and adding in other healthier ingredients like butternut squash. The only reason I titled it company chili is because it makes more than my family will eat on our own, almost reason enough to throw a party!

Turkey Chili with Butternut Squash
Serves 8-10

Ingredients:
1 onion chopped
2 tbs olive oil
2 lbs ground turkey meat
1 can black beans
1 can hominy beans
1 tsp kosher salt
1/4 tsp pepper
1 tbs chili powder
1 tsp cumin
1 can diced tomatoes
3 tbs tomato paste
2 bay leaves
1 small to medium butternut squash peeled and chopped into 1-2 inch pieces
2 c water
1-2 tbs apple cider vinegar
1 tsp honey
salt and pepper to taste

Directions:
Heat olive oil in stock pot, add onions and garlic. Sauté until onion starts to glisten but before garlic starts to burn approx 3-4 min. Add ground turkey till it browns approx 10 min.

While meat is cooking, rinse beans in colander and let drain in sink.

Add kosher salt, pepper, chili powder, cumin to meat and mix to coat. Add tomato paste, diced tomatoes and butternut squash cover with 2 cups of water. Let simmer 30-35 min until liquid is slightly reduced. Stir in 1-2 tbs apple cider vinegar and 1 tsp honey at the end of cooking. Add salt and pepper to taste.

Serve with an assortment of toppings like sour cream (or greek yogurt), chopped green onions, cilantro, diced avocado, or cheese.
