Pantry Granola

Homemade granola makes the best holiday gifts!

As the holidays are quickly approaching I’ve been thinking about ways to spread love through baking but wanted to do something other than a traditional cookie box and a little less labor intensive. Homemade granola is one of the most delicious, addictive foods, so much so that I rarely keep in the house because I’d eat it all straight out of the oven if I could. It packages and stores well making it the perfect gift and who doesn’t like freshly baked granola?

My go to recipe has always been a version of Early Bird Granola using olive oil and maple syrup. When I checked my pantry the other day and found I was out of olive oil I was forced to research other recipes. I stumbled upon one using coconut oil instead and tried it out, I think it was just as good and perhaps even better than my original recipe. It’s slightly less sweet and of course can be adapted with whatever ingredients you have in your pantry. This is basically a mix and dump on a baking sheet recipe that takes no more than ten minutes to prepare. The hardest part is waiting the full 45 minutes until the granola is fully baked to try it.

This recipe is very adaptable, swap out the nuts, seeds and dried fruit to your liking

Ingredients

  • 3 cups rolled oats
  • 1 cup chopped pecans (pistachios or sliced almonds would be great too)
  • 1 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 3/4 cup coconut oil, melted
  • 2 tbs honey
  • 2 tb maple syrup
  • 1 tsp cinnamon
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 cup dried apricots, chopped
  • 1/2 cup unsweetened coconut flakes, toasted

Directions

  1. Preheat oven to 300 degrees
  2. Combine wet ingredients (coconut oil, honey and syrup in the bottom of a large bowl), whisk till combined.
  3. Add dry ingredients to bowl and mix gently till oats are well coated.
  4. Spread evenly in one layer on a baking sheet (using a slip mat or silicone baking mat is helpful).
  5. Bake for 30 min. Stir in apricots and coconut flakes and bake for another 15 min.
  6. Remove granola from oven and let sit on sheet pan for 10-15 more minutes. The longer you let the granola sit after baking on the sheet pan, the more clumps will form if you like those!

This granola can be made with pretty much anything you have lying around in your pantry.
